Is there anything better than a warm, fluffy waffle in the morning? Light and soft on the inside with crispy edges. Now what if that waffle was gluten free, packed with protein, and still just as delicious?! That’s exactly what these waffles are! They use almond flour to keep them gluten free which also gives them a deep nuttiness. The combination of blueberry muffin protein and fresh blueberries make sure they’re packed with more than enough flavor to satisfy your cravings!

Ingredients
1 cups almond flour
2 scoops BPN Blueberry Muffin Protein
1 tbsp baking powder
2 eggs
½ cup Greek yogurt (plain, nonfat)
1 tsp vanilla extract
½ cup blueberries
Cooking spray
Directions
In a mixing bowl whisk together dry ingredients (almond flour, protein powder, baking powder)
In a separate bowl whisk together the eggs, Greek yogurt, and vanilla extract. Mix into dry ingredients.
Preheat a waffle iron to medium high heat. Spray with a cooking spray.
Pour in about half the batter. Sprinkle about a ¼ cup of blueberries around the batter and close the waffle iron. Cook for 3-5 minutes, until done. Tip: Because this is almond flour, it can be more delicate than a classic waffle. If you open the waffle iron too soon then it could fall apart, so make sure to leave it for at least the first 2 minutes before checking it.
Remove from the waffle iron and repeat with the second half of the batter.
Top with some more blueberries and syrup and enjoy!
