Gluten Free Lemon Pancakes

Everybody loves pancakes, but it can be hard to find a good healthy, gluten free version that still tastes great. These use oat flour to make sure you’re fully satisfied and have the nutrition you need to go take on the day! And the best part is they’re full of collagen, too! The lemon zest helps brighten it to make it a little more summery and chef.

Ingredients
1 ½ cups oat flour (you can grind old fashioned oats in a food processor to make your own)
2 scoops Collagen Protein
1 tsp baking powder
3 tbsp coconut sugar
Pinch of salt
¾ cup buttermilk
1 egg
Zest of 1 lemon
1 tsp vanilla extract
Cooking oil
Directions
In a bowl whisk together dry ingredients. (oat flour, collagen, baking powder, coconut sugar, salt)
In a separate bowl whisk together wet ingredients. (buttermilk, egg, lemon zest, vanilla)
Add dry ingredients to wet and whisk until well combined. Allow the batter to sit for at least 10 minutes.
Heat a large frying pan over medium heat. Add whatever cooking oil you prefer to use. I like butter or coconut oil.
Scoop out about ¼ -⅓ cups of batter into pan and fry about 3 minutes per side.
-Be careful with these because they can be a bit crumbly when you turn them.
Transfer to a plate and top with some berries, fruit, or syrup!
