Korean Style Beef & Rice Lettuce Wraps

This recipe solves what has become known at BPN as a 'Beef & Rice problem'. We go around at lunchtime to find nearly every BPN employee eating dull, sad, dry, cold beef & rice - and we can't stand it any longer. This recipe provides a unique, flavorful (and still healthy) take on the usual beef & rice, so you can enjoy as a meal-prepped lunch or easy-to-make dinner option!

Ingredients
1 head lettuce or premade lettuce wraps
1 lb lean ground beef
1/2 cup brown sugar
1/4 cup reduced sodium soy sauce
1 tbsp sesame oil
3 tbsp rice wine vinegar
3 cloves garlic - minced/grated
1/2 tsp ground ginger
1/2 tsp red pepper flakes
1 bunch green onions
2 cups sushi or basmati rice
Sesame seeds for garnish (optional)
Directions
In a medium-sized bowl, whisk together the light brown sugar, soy sauce, sesame oil, garlic, ginger, rice wine vinegar, and red pepper flakes until blended - then set aside.
Prepare rice according to package instructions.
In a large skillet, brown the ground beef.
Drain any excess fat or liquid from the ground beef.
Pour the sauce over the cooked meat in the skillet and mix to combine, cooking for another 2-3 minutes.
Add rice to lettuce wraps, and top with ground beef.
Garnish with green onions and sesame seeds.
