Peppermint Protein Hot Chocolate

There are few things better on a cold night than relaxing with a cup of hot chocolate. This protein packed version is not only vegan, but uses homemade almond milk to make it extra delicious! Add in a little peppermint and cinnamon and it tastes just like the holidays in a cup!

Ingredients
1 cup almonds
5 cups water
3 pitted dates
1 tsp vanilla extract
2 cups almond milk
1 cinnamon stick
½ tsp peppermint extract
2 scoops BPN vegan chocolate protein
Candy cane (for garnish)
For the almond milk
For the hot chocolate (2 cups)
Directions
Place almonds, water, dates, and vanilla into a blender and mix until well blended. It’s ok if there are still some chunks of almonds.
Pour through cheese cloth into a pitcher. Squeeze the cheese cloth to get out as much liquid as you can.
Refrigerate until ready to use.
-When you make homemade almond milk it tends to separate and settle. So you’ll need to mix it up when you’re ready to use it.
For the hot chocolate
Mix almond milk, peppermint extract, and cinnamon stick together in a pot. Bring up to medium heat.
Simmer for about 5 minutes. Remove cinnamon stick.
Whisk in protein and heat to medium high.
Pour into a mug and top with a candy cane for garnish!
