Ingredients
¾ cup (90g) All-Purpose Flour
½ cup (64g) Peanut Flour (PB Fit or PB2)
2-3 tbsp Stevia or Natural Sweetener (more or less to taste)
½ tsp Baking Powder
¼ tsp Salt
½ tsp Cinnamon
1 Whole Egg
½ cup (120g) Unsweetened Applesauce
3 tbsp (42g) Light Butter
1 tsp Vanilla Extract
1 scoop (34g) BPN Cinnamon Roll Whey Protein Powder (or Vanilla)
½ tbsp Ground Cinnamon
3 tbsp Granulated Sugar (or Sugar Substitute)

Directions
Preheat the oven to 350F. In a large bowl, mix together: flour, protein powder, peanut flour, sweetener, baking powder, salt and cinnamon. Add egg, applesauce, light butter, and vanilla extract. Mix until a thick dough forms.
Add ground cinnamon and granulated sugar (or sugar substitute) to a bowl. Scoop dough into 8 balls. Roll in the cinnamon-sugar mixture.
Place on a cookie sheet. Press each cookie dough ball down slightly with your fingers or a fork to flatten. Bake at 350F for 8-10 minutes. They cook quickly, so don’t forget about them. Enjoy!
