Apple Pie Protein Muffins

Ingredients
1 apple, diced
1 tbsp water
¼ cup and 1 tbsp coconut sugar
2 cups oat flour
2 scoops Apple Pie Protein Powder
1 tsp baking soda
1 tsp cinnamon
1 cup Greek yogurt (nonfat, plain)
5 egg whites, or ⅔ cup
1 tsp vanilla
olive oil spray (or coconut oil)
Directions
In a small sauce pan mix apples, water, and 1 tbsp coconut sugar.
Bring up to medium heat and simmer for 10 minutes, until sugar dissolves and caramelizes the apples, stirring occasionally.
In a large mixing bowl whisk together dry ingredients. (oat flour, protein powder, baking soda, cinnamon, and remaining coconut sugar)
In a separate bowl mix together yogurt, egg whites, and vanilla.
Add the wet ingredients into the dry mix and whisk together until a consistent batter forms.
Preheat the oven to 350F.
Spray a muffin pan and fill with batter. Fill each slot about ⅔ full to give it room to rise.
Spoon caramelized apples on top of batter.
Bake for 15-20 minutes, until risen and golden brown.
Let them cool and then enjoy!
