We all know that oatmeal is a great breakfast option. It tastes amazing with fruit or berries, but have you ever thought to make it savory? You should! The thing that makes oatmeal so versatile is that it takes on whatever flavors you pair with it. This nutritious, filling power bowl is a delicious way to get your day started.

Ingredients
1 tsp olive oil
¼ cup diced zucchini
¼ cup sliced mushrooms
¼ cup cherry tomatoes
1 tbsp balsamic vinegar
1 cup quick oats
2 cup chicken broth (low sodium)
1 fried egg
Everything bagel seasoning
Salt and pepper to taste
Directions
Heat olive oil in a sauce pan to medium heat.
Add zucchini, mushrooms, and tomatoes. Saute until browned, about 4-5 minutes. Before adding the cherry tomatoes poke them with a knife or fork to make a small hole in the skin. This will keep them from exploding when they heat up.
Add balsamic vinegar and oats to the pan and saute for another minute or two.
Add chicken broth and simmer until the oats have soaked up the liquid, about 5 minutes.
Transfer to a bowl. Fry an egg however you like it (I love sunny side up) and serve on top of bowl of oats. Sprinkle with everything bagel seasoning, salt, and pepper. You can also add avocado or some goat cheese!
