You can’t celebrate Mother’s Day without brunch! But instead of taking mom out, show her how much you care by making something delicious and healthy-ish right at home. This coffee cake is easier to make than you probably think and we adding some collagen to make sure mom is glowing inside and out!

Ingredients
1 ½ cups whole wheat flour
½ tsp baking soda
1 tsp baking powder
1 tsp cinnamon
⅔ cup coconut sugar
3 scoops Collagen Protein
1 cup greek yogurt (plain, nonfat)
2 tbsp coconut oil (melted)
1 egg
3 tbsp egg whites
2 tsp vanilla extract
3 tbsp coconut oil (melted)
½ cup rolled oats
½ cup coconut sugar
1 tsp cinnamon
1 tsp nutmeg
For the cake

Directions
Preheat oven to 350ºF.
Use a stand mixer with the whisk attachment, or a hand mixer, to mix together the dry ingredients for the cake.
In a separate bowl mix together yogurt, coconut oil, egg, egg whites, and vanilla. Slowly add to dry ingredients while mixing until well combined.
Spray a 9x9 baking dish with cooking spray and add cake batter. Smooth so the top is even.
In a bowl mix together the streusel ingredients. Spread out on top of cake batter.
Bake for 25-30 minutes, until you can insert a toothpick and it comes out clean.
Allow the cake to rest for at least 20 minutes.
Slice and enjoy!
