Ingredients
4 oz Egg Whites
½ tsp Cream of Tartar
½ cup Sugar
½ tsp Vanilla
4 scoops Protein, Fruity Cereal Flavor
2 cups Rice Krispies
2 cups Fruity Pebbles
Directions
In a medium heat proof mix egg whites, cream of tartar, and sugar. Place bowl over a saucepan filled with a few inches of simmering water. (If you have a double boiler that works as well)
Whisk constantly while sugar dissolves until the mixture thins out, about 3-4 minutes. You’ll know it’s ready when the top gets a little frothy.
Remove from heat and transfer to the bowl of a stand mixer. Add vanilla and using the whisk attachment beat it on high speed until peaks start to form, about 5 minutes. If you don’t have a stand mixer you can use a handheld mixer.
Add protein and whisk for another 2-3 minutes. Start on low speed until it starts to mix in and then raise it to medium high speed.
Mix in Rice Krispies and Fruity Pebbles.
Transfer to a square or rectangle dish lined with parchment paper. Cover with plastic wrap and let cool for at least an hour.
Cut into 16 pieces. They’ll keep for about 5 days in a tupperware container, a little more if refrigerated. Share with friends or eat them all yourself, we won’t judge!
Recipe Note
The easiest way to cut them up is to cut it into 4 equal size pieces, then cut each of those into 4.
