Thanksgiving Leftover Turkey Salad

So it’s the Friday morning after Thanksgiving and you have a fridge full of leftovers that you don’t know what to do with, we’ve all been there. Well we’re here to help! A few years ago I decided to shred the leftover turkey breast and turn it into a turkey salad that can be a great healthy(ish) snack. The best part about this recipe is you can easily tweak it to include whatever you have around. Replace some of the breast with dark meat, add some fresh herbs or lemon juice, or do whatever sounds good to you! Once you get the base down, you can customize it however you want.

Ingredients
2 cups shredded turkey breast
1/4 cup chopped walnuts
1/2 cup dried cherries
½ cup olive oil mayo
¼ cup whole grain mustard
1 tsp garlic powder
1 tsp dried paprika
Directions
In a large mixing bowl stir together mayo, mustard, garlic powder, and paprika. This will help ensure everything gets evenly distributed.
Mix in turkey breast, walnuts, and dried cherries.
That’s it! I suggest putting it on some leftover rolls to build little sliders. It’s also great in a wrap or on top of some grains as a power bowl.
