Vegan Chocolate Protein Truffles

When my craving for chocolate hits, I’m pretty much useless until I get some chocolate. When that does happen one of my favorite treats is a soft, decadent chocolate truffle. So I wanted to make a healthier version that wouldn’t mess up my macros, and maybe get in a little extra protein while I’m at it. This version still has all of the flavor and texture of the classic, but is vegan friendly and more nutritious!

Ingredients
6 oz dark chocolate (I used 100%)
1 medium avocado
2 scoops BPN vegan chocolate protein
1 tsp vanilla
¼ cup cocoa powder
¼ cup chopped pistachios
Sea salt

Directions
In a double boiler (a glass mixing bowl set over a pot of simmering water) melt the dark chocolate, stirring occasionally.
In a separate bowl mash the avocado. I like to use a whisk to make sure there are no big chunks left.
Whisk protein powder in with avocado.
Once chocolate has melted pour it into avocado and protein mixture. Whisk well until you get a smooth texture. Let sit and cool for at least 15-20 minutes.
Roll into 12 equal sized balls and place on a plate lined with wax paper.Refrigerate for at least an hour.
Roll truffles in whatever toppings you like! I made 3 versions using cocoa powder, chopped pistachios, and topped with a pinch of sea salt. You can also use coconut flakes, cinnamon sugar, hazelnuts, or whatever else you can think of!
